[Food] Kong-guksu (콩국수, Cold Bean Soup Noodle)

[Food] Kong-guksu (콩국수, Cold Bean Soup Noodle)

Kong-guksu (콩국수, Cold Bean Soup Noodle)

In previous articles, I introduced you to a few dishes that Koreans enjoy in the hot summer such as Naengmyun (Cold noodle), Makguksu (Cold buckwheat noodle) and Samgyetang (Korean Ginseng Chicken Soup).

Today's dish (photo above) is Kong-guksu (콩국수, Cold Bean Soup Noodle), which is a typical Korean summer dish. 'Kong' means Bean in Korean and 'Guksu' means noodle. Its recipe is simple, grind and steam softened beans then mix with some water to prepare a cold bean soup.

Peeled, steamed and softened beans
Korean traditional millstones. Must-have-gear to cook Kong-guksu in the old days before invention of electric grinder.
Personally, I prefer using traditional millstones rather than electric grinders to grind beans into soup because you can taste the whole natural bean flavor. Moreover, you can enjoy the crunchy and nutty flavor from coarsely crushed beans. So some restaurants which use a traditional recipe and millstones put up a signboard that reads, 'Traditional millstone-grounded bean soup', to promote that they have better bean soup.

Cold bean soup from black beans
However, Koreans either love or hate the taste of cold bean soup noodles; fans love it because of its cool, nutty, plain and mild flavor. Those who really dislike it do so because of its fishy, cold bean flavor (some people sense it more than others). Me? I LOVE kong-guksu.

Our Korean ancestors traditionally cooked using beans more than 2000 years ago, passing down excellent tofu and bean-paste recipes from generation to generation. However, the kong-guksu recipe only appeared at the end of 19th century; more than 110 years since now. Its history is the part people get curious about, but no one knows why.

Anyway, people praise kong-guksu with its thick bean soup as the best kong-guksu because of the amount of bean paste put into the soup while some people prefer water-like bean soup. So, a thicker soup means a better cold bean soup noodle :)

This is 'thick' bean soup; it looks like cream-based pasta.

If you are vegetarian or want to taste something unique other than sweet-spicy cold noodle, how about cold bean soup noodle? :)

[HWPL] No Religious Conflicts Please. Let's Have a Talk, Believers.

[HWPL]

[HWPL] No Religious Conflicts Please. Let's Have a Talk, Believers.

On April 21st, 8 bomb terror incidents happened at Catholic and Protestant churches celebrating Easter service in Sri Lanka. No group has yet come forward as the perpetrator behind the terror attack. It is not easy to know who masterminded it because Sri Lanka has a tragic history of racial conflict that ended in 2009, as well as religious tension among Buddhists, Muslims and Hindus. However, those three religions are hostile to Christianity because Sri Lanka was once colonized by Portugal, Netherlands and the United Kingdom which have a Christian background. So now it is very uncertain who carried out this terror attack against churches.

Given that there are so many religious conflicts, it is obvious that religious leaders need to talk to each other to resolve such conflicts and make world peace.

Chairman Man Hee Lee of HWPL (Heavenly Culture, World Peace, Restoration of Light) has been carrying out global initiatives for world peace since 2014. The WARP (World Alliance of Religions' Peace) Office meeting is one of them. It hosts open forums and discussions for religious leaders and the audience to discuss and talk so that different religions can understand each other and resolve their misconceptions.

Throughout the WARP Office meetings and interfaith dialogue, panels and participants search for a common goal and truth among religions which can eventually guide them to world peace and religious harmony. Now there are 250 offices in 128 countries today.

At the meeting, each panel receives three questions from the main topic plus one or two additional questions from the other panel or audience regarding the topic. There are some rules to prevent 'chaotic' discussion such as panels having to answer questions according to their scripture and must listen to the mediator from HWPL's WARP Office.

Currently, leaders of the Christiani, Buddhist, Muslim, Sikh, Hindu and Zoroastrian faiths - to name a few - have all participated in person at the WARP Office's global branches, and an Intercontinental Online WARP Office meeting has recently been set up via YouTube Live.

It is very appealing and fascinating that an audience can listen to what is written in each religious scripture in a good and polite setting without conflict or quarrelling.

[Food] Hwe-Naengmyeon (회냉면, Korean Cold Noodle with Fermented and Seasoned Raw Sole on Top)

[Food]

[Food] Korean Cold Noodle with Fermented and Seasoned Raw Sole on Top

Jumunjin Port, Gangwon province (North-East Region), South Korea
Jumunjin is a very quiet, small port city in Gangwon province (North-East), South Korea. The city is famous for its Squid Festival (every summer) and as a filming site of many Korean dramas and K-pop music videos.

Raw flounder dish

As in other Korean port cities, the people of Jumunjin are very familiar with raw fish and seafood. They don't enjoy raw fish just by itself, but with cold noodles and spicy sauce too. Today, I want to introduce you to one of my favorite restaurants famous for Hwe-Naengmyeon (Korean cold noodle with fermented and seasoned raw sole on top).

Entrance of the restaurant. It just looks like a modern Korean house

Kitchen of the restaurant where everything is cooked
Menu, it's not expensive

Guideline for eating hwe-naengmyeon
1. Put as much mustard/vinegar/sugar as is desired
2. Pour meat broth onto the noodle to be mixed with the sauce
3. In case of buckwheat noodle, there’s no need to cut. In the case of sweet-potato noodles, it is convenient to eat them when cut 2-3 times.

Autographs of Korean celebrities who visited the restaurant
Appetizer. Traditional thin buckwheat pancake. A unique dish of Gangwon province.

Crispy outside, Chewy and soft inside.
Hwe-Naengmyeon. Thin and elastic noodle. Well-fermented and sweet, accompanied by spicy raw sole.

Raw sole's bones were intentionally left to give a crispy, hard and chewy flavor. On the other hand, its flesh is so tender as it is soaked in sauce, which some people dislike because of the bone and uncooked flesh.

Professional cold noodle cooks are reputed by the quality of the noodle; softness, chewy, elasticity etc.

Meanwhile, I’ve heard that cold noodles are one of the most unpopular Korean dishes for non-Koreans. I understand why (maybe, like cold soup, cold noodles are not familiar to non-Koreans), but it's worth a try! :)

[HWPL] The 6th HWPL Intercontinental Online WARP Office Meeting - About the Beginning of Man

[HWPL]

[HWPL] The 6th HWPL Intercontinental Online WARP Office Meeting - About the Beginning of Man

Original Video YouTube Video Link

Chairman Man Hee Lee of HWPL (Heavenly Culture, World Peace, Restoration of Light) has been carrying out global initiatives for world peace such as the Legislate Peace campaign, May 25th Peace Walk and Peace Letter campaign, with the Declaration of Peace Cessation of War (DPCW), Peace Education and the Alliance of Religions as the basis.

HWPL's Intercontinental Online (and Offline) WARP Office meeting is a part of the Alliance of Religions. According to statistics, 80% of wars are caused by religious conflict. Mr. Man Hee Lee's idea is that all religions talk and discuss about each other's doctrines and beliefs, so that they can understand each other, resolve and prevent conflict. The ultimate goal is to help religious leaders find the best truth among all religions and scriptures so they can be one in religion and belief, which would mean the end of all religiously-motivated conflicts and wars.

HWPL's WARP (World Alliance of Religions' and Peace) Office meeting provides the perfect platform to achieve Chairman Man Hee Lee's objective, which has been hosted globally since 2014 and has assisted religious leaders and believers to talk and discuss to find the truth and to understand each other for world peace.

Now in 2019, there are 250 WARP Office branches in 128 countries with countless WARP Office meetings hosted. In the case of the Intercontinental Online WARP Meeting, this is the 6th one.

The topic of the 6th Intercontinental Online WARP Office Meeting was 'About the Beginning of Man' which was hosted on May 15th with panels from the Christian, Muslim, Zoroastrian, Sikh, Hindu and Buddhist faiths. It incorporated two sessions with one same question and two different questions posed for the panels.

Session 1 - Sikh, Zoroastrian, Christian and Muslim faiths

Questions for Session 1
1. Does your scripture have a record of the beginning of man? (When was he/she created and what's one's name?)

2. How does your scripture describe his/her appearance? (According to some scriptures, mankind is created according to the image of God)

3. Who was created first? Man or Woman?

Session 2 - Zoroastrian, Muslim, Christian, Buddhist and Hindu faiths

Questions for Session 2
1. Does your scripture have a record of the beginnings of man? (When was he/she created and what's one's name?)

2. Is it written in your scripture about what God asked man after creating him/her?

3. Does your scripture have a record of a family tree and genealogy?

Religious leaders discussed and answered questions passionately and curiously towards other religions. It was also very interesting that they received questions from online participants in an interactive chatroom.

It was interesting to listen and learn about each religion and the similarities between doctrines about the creation and the beginnings of mankind. Some religions have their own unique doctrine about the origins of mankind and the world, which fascinated the participants.

If you missed the meeting, don't worry :) There is still a chance on YouTube (Above links). It doesn't matter if you have a religion or not. If you want to stop world conflicts and wars, and achieve world peace then this is the video you'll want to watch :)

Peace!

[HWPL] 525 Peace Walk Event is Photogenic! - Beautiful Photos of 525 Peace Walk Event from Korea

HWPL (Heavenly Culture, World Peace, Restoration of Light. Chairperson: Mr. Man Hee Lee) published an official article about the May 25th Peace Walk Event. Its homepage reported that "the 6th Annual Commemoration of the Declaration of World Peace and Peace Walk" was held under the theme "The World's Call for Peace, Urging Support for the Declaration of Peace and Cessation of War (DPCW)" in 126 cities in 77 countries including Australia, China, Germany, India, Russia, South Africa, the Philippines, and the United States of America.

In Seoul, South Korea, the event was hosted at the Olympic Park with more than 20,000 citizens participating in the "Peace Letter Campaign" to support the DPCW (Declaration of Peace and Cessation of War) with its 10 articles and 38 clauses, urging world leaders to enact the DPCW as legally binding international law.

HWPL (Heavenly Culture, World Peace, Restoration of Light. Chairperson: Mr. Man Hee Lee) also provided beautiful photos of the May 25th Peace Walk Event that was held in Seoul and other cities throughout Korea. Let me show you some of them :)
