[Food] Gwamegi (과메기, Half-dried herring and saury)




Gwamegi has been a very familiar and friendly food for fishermen of the east coast of the Korean peninsular for a long time (since the 16th century) because of its taste and affordable ingredient. Its main ingredient is herring or saury (mackerel pike) which is very cheap and easy to catch. When fishermen found out about its recipe a long time ago, they made it with herring. However, when the temperature of the East Sea became affected by climate change  since the 1960s, they used saury as a substitute for herring. These days herring gwamegi is being produced again because climate change has continued to impact the East Sea.

To make gwamegi, fishermen remove the intestines, gills and scales of fresh saury and herring, then skew its eyes to prevent it from getting rotten. Then fish are frozen to -10 degrees Celsius, and undergo repeat outdoor freezing and defrosting from December until the fish become half-dried.


When fish is fully half-dried, its bone and skin are removed. It has a really savory, somewhat fishy taste with seaweed, kelp, laver, garlic, spicy green chili, chogochujang (red chili paste with vinegar) and ssamjang (mixture of red chili paste and bean paste).

It rarely becomes stale and can be stored for a long time so fishermen favor it. It was also a good food supply for them when they lost their ship due to invasion and robbing by Japanese pirates.

Today, this is one of the best side dishes for soju :)



People usually favor herring gwamegi over saury gwamegi because herring tastes lighter, cleaner and motr plain than saury. Gwamegi is a seasonal dish that you only can eat during the winter, which gives a chewy and firm texture filled with DHA, EPA and vitamin E :)

Today Guryongpo of Pohang is the main production area, famous for gwamegi. Don't forget to visit Guryongpo for gwamegi if you have any chance to visit Pohang :)

Year 2020 marks the 70th anniversary of the Korean War which scarred the whole Korean peninsula in the 20th century. Two ideologies (democracy and communism) clashed on a small peninsula as 21 countries fought for the ideologies they followed and more than 50 countries helping one side with medical or financial support. All people struggled for the peace that they believed in, resulting in more than one million casualties. Today, Chairman Man Hee Lee and his peace groups (HWPL, IWPG and IPYG) are working together with people throughout the world for sustainable world peace. I begin these serial postings recalling the Korean War, paying respect to all those who fought and sacrificed their lives in the Korean War, and inform you how Mr. Man Hee Lee and his peace groups (HWPL, IWPG and IPYG) have been working for world peace and for future generations :)

Every week, I will write about one country that participated in the Korean War and how the country has been working together with Chairman Man Hee Lee and these peace groups for world peace :)

Today's countries is Thailand.


Thailand dispatched more than 6,326 soldiers and they suffered more than 1,300 damages including death, casualties, lost and POWs. They usually served as reconnaissance and navy.





Chairman Man Hee Lee of HWPL (Heavenly Culture, World Peace, Restoration of Light), who is also a veteran of the Korean War, underwent all kinds of cruelty and hardship during the Korean War and has been working for world peace since 2012. VIPs and citizens of Thailand have been jointly worked for the world peace with HWPL with passion towards the peace and harmony. They have participated in the WARP (World Alliance of Religions' Peace) World Peace Festival every September 18th, May 25th Peace Walk, the Legislate Peace project, WARP Meeting & Interfaith Dialogue, Peace Letter campaign and more initiatives to achieve world peace with Chairman Man Hee Lee and the peace groups (HWPL, IWPG and IPYG).










I'm certain and hopeful that people in France and Togo will keep working with Chairman Man Hee Lee and HWPL for world peace and a brighter future for future generations as they have done so far :)

Ancient Koreans were not very fond of meat diets; they usually gained energy and protein from abundant bean and seafoods instead of meat. The meat diet flowed into Korea in the 13th century through the Mongol Invasion but it still remained uncommon because Korea's major religion at that time was Buddhism. Even the 16th century's Chosun Dynasty prohibited the butchering of cows because cows were a very precious tool and resource for farming.

So Koreans cooked stew with dog or an old cow for a party or a patient. They added strong and bitter spices and seasonings to remove the pungent smell of meat, and thick green onions, mung-bean sprouts, bracken, taro branch, red chili and more. This traditional recipe has passed down to today, except for dog meat :)

Yukgaejang is also famous as the dish eaten by King Soonjong who was the last king of the Chosun dynasty. The Master chef of Chosun palace served King Soonjong a bowl of yukgaejang when King Soonjong was in deep sorrow and pain after losing the kingdom to Japan. The anecdote tells of King Soonjong eating yukgaejang with tears running down his cheeks.


These days, Koreans enjoy eating yukgaejang in all seasons regardless of the weather. In contrast with traditional recipes, chicken or beef is used for today's yukgaejang and is still very spicy and hot. Koreans usually eat yukgaejang in summer because its spicy taste builds an appetite and the meat gives energy and stamina to those who are exhausted from the heat.

However, yukgaejang is not an easy dish to cook. Every vegetable has to be chopped and seasoned with spices, and the meat has to be fully steamed and torn into small pieces. Then every prepared vegetable, seasoning and meat is boiled for several hours in beef stock. To cook a delicious yukgaejang quickly, your hands must be very busy. More than 10 years ago, I cooked it with one of my friends. I remember deeply thanking my grandmother who cooked yukgaejang by herself for me every time I visited her after finishing cooking yukgaejang.

Nevertheless, yukgaejang is a very popular traditional Korean dish :) Its spicy, savory and meaty flavors are more than enough to awaken one's spirit and body :)

Today eating saltwater fish is very common for Koreans. Maybe it's very obvious because Korea is a country on the peninsular with vast marine resources and fishing technology. The East Sea and waters to the west and south have been long-time suppliers of a variety of seafoods to Koreans, but only to people living in cities near the coastlines.

Those less fortunate to be born in the inner (central) part of South Korea have had few opportunities to taste saltwater fish because of poor transport networks as seafood becomes stale during its period of transportation from the sea. However, there are many streams and creeks in mountains and plains that provide much freshwater fish and shellfish.

Minnow is a very common, typical freshwater fish found in any stream or creek in South Korea. It's not a big fish;  just the size of one's palm. Let me show you a picture of it because I think that seeing it is believing.

I'm quite sure that Koreans are not only people refined in good music but also fine gourmet. People in Chungcheong Province thought about eating freshwater fish in a more delectable manner and so invented 'Doribaengbaeng (도리뱅뱅, Spicy Roasted Minnow)'. It's a very simple dish where one roasts small minnows on a grill or pan then tops it with a spicy sauce, garnished with a sprinkling of sesame seed :)

It had only become a well-known traditional Korean food in 2019 when a comedian on a major prime-time show aired nationally stopped at Geumgang Rest Area to eat doribaengbaeng. I haven't tasted it yet but I really want to, and I wonder how it tastes :)

As in most Asian countries, Koreans' main dish and source of carbohydrates is rice. However, rice is very plain and has very little sweetness so Koreans who have loved gourmet cuisine since ancient times have garnished countless side dishes of rice.

Korea is a peninsular surrounded by water so Koreans invented many seafood recipes. It wasn't only in countries surrounding the Mediterranean Sea like Italy that caught anchovies, but also Korea from its surrounding waters. They are different species but both are fishy and retain a sea taste.


As a side dish or as garnish, Koreans eat small-or-mid sized anchovies. When they are stir-fried, they become very crispy and savory with the taste of the sea. Koreans put starch syrup with soy sauce or chili paste. When it is placed on top of cooked rice, its sweet, salty and crispy flavor gives a kick.



To add a more crispy and savory taste, Koreans add nuts such as sesame, pine nuts, walnuts or peanuts. No one knows who first starting cook anchovies with nuts but I personally think that he or she should be recorded as one of the greatest people in Korean history because it tastes really good. Anchovies are usually fried with green or red chili as a spicy dish too.

Like tofu and beansprout, anchovies are one of the cheapest ingredients in Korea, so it is a very popular dish on the Korean table. Korean moms usually buy and cook a batch of them for storage in the freezer so the family can eat it for a long time :)

If you ever have the chance to visit or are invited by a Korean family, you will find it very easily. Try some of it, then you will know it tastes better when it is stir-fried than as a topping on pizza. :)

On September 9-10th 2019, HWPL (Heavenly Culture, World Peace, Restoration of Light; Chairman Man Hee Lee) hosted their 5th Annual Commemoration of the September 18th World Peace Summit in Berlin, Germany with more than 100 participants including the former Prime Minister of East Germany, the Ambassador of South Sudan in Germany and delegates from the governments of Germany and Romania, legal experts, religious leaders and representatives from media, youth and civil society to discuss the work of peace for world peace.

HWPL presented the progress of its main world peace initiative entitled "Legislate Peace" that urges participants to support the DPCW and to spread peace culture throughout the world. One of the participants, H.E. Beatice Khamisa Wani Noah, Ambassador of South Sudan in Germany, said :

"I believe peace can be achieved if Africans, Europeans, Asians, and the people of the world work together for the 10 articles 38 clauses of Declaration of Peace and Cessation of War (DPCW)” and the implementation of peace education and the culture of peace envisioned by HWPL will pave a way for the future generation to bring peace."

On September 10th, participants gathered to find concrete methods to achieve reunification of the Korean peninsula. All participants agreed that North and South Korea have to learn from and follow the model examples set by East and West Germany. They suggested the following for the reunification of the Korean Peninsula :

1) Presenting politicians' and officials' peace-keeping activities before and after and German unification

2) Introducing the desire and necessity of peaceful unification from the perspective of Korean reporters and youth

3) Taking a close look at the resulting problems and solutions post-unification of Germany in 1990

H.E. Hans Modrow, the former Prime Minister of East Germany said :

"Discussions should be focused on examining the current issues, consequences of the reunification in order to overcome the unresolved social and economic issues from the German Reunification."



Mr. Byeong Suk Kim, General Director of HWPL Berlin, introduced the work Chairman Man Hee Lee has been carrying out for world peace since founding HWPL.

VIP guests who joined in the event promised to work together with HWPL for world peace and for peaceful reunification of the Korean Peninsula.

[Peace Quotes] Interview with Chairman Man Hee Lee of HWPL: Forward the World Peace





HWPL (Heavenly Culture, World Peace, Restoration of Light) recently published an interview with Chairman Man Hee Lee about the peace work of HWPL and world peace. Mr. Lee answered 5 questions about world peace but I'm only sharing a few of Mr. Lee's answers. I recommend you read the whole article via the link above :) It contains a very inspiring message for the world.

Mr. Man Hee Lee the Peace Advocate who has traveled around the world more than 30 times and visited more than 100 countries since 2012 for the world peace

"Peace is not just a matter of one individual or one country. It matters to all people of the world...."

Absolutely true. If we can't stop world conflicts, wars will come to everyone which will lead us to doom.



"All world religions must return to this original meaning of religion. They must not be the source of conflicts with one another..."

If most conflicts in the world are caused by religion, then they have to engage in dialogue with each other to resolve their problems. We want a peaceful end to all conflict.


"If heads of state truly love their citizens and their countries, they will not be able to ignore the will of the people.........Their (the youth) Peace Letters will certainly move the world."

I also think that a true politician must consider the future and happiness of all people. What good is politics if people are close to death and surviving miserably without peace?



As a proud member of HWPL Supporters One, my wish is that more and more people work together on HWPL's peace campaign with Chairman Man Hee Lee. Then we can achieve world peace soon for everyone.

[Peace News] Hanguk Daily Reports Achievements of the 31st World Peace Tour of HWPL



HWPL (Heavenly Culture, World Peace, Restoration of Light) and Chairman Man Hee Lee finished the 31st World Peace Tour with great results through events organised with the Ministry of Foreign Affairs in Romania, Institute for Advanced Studies in Levant Culture and Civilization (ISACCL) and Center for Baltic-Black Sea Studies (Center for BBS).

These organizations and HWPL co-hosted a conference entitled 'The Role of Cultural Diplomacy in Approaching the Protracted Conflicts - Culture of Peace through Understanding the Other' on the 30th anniversary of the collapse of dictatorship in Eastern Europe.

The news reported that a conference under the title 'The role of religion for world peace' was hosted and religious leaders from Christianity, Buddhism, Judaism, Islam, Sikhism, Hinduism, Romanian Orthodox Church, Bahaism etc. all participated in the event.

The news also reported that 5 former Eastern European presidents, peace and human rights activists from Europe and Asia, as well as journalists, participated in 'The Korean Peninsular Peace Reunification Forum' to discuss international support and co-operation for the peaceful reunification of the Korean peninsular.

VIPs who jointly worked with the organizations said that the Korean government has to learn lessons from the reunification of east and west Germany to prepare for the reunification of the Korean peninsular, and the global community has to take an interest in the Korean peninsular's peaceful reunification because it was divided through force by other countries. They added that the two Koreas’ decision must be respected fully and impartially.

At the conference, Chairman Man Hee Lee said :
"If you think we can cease war through the DPCW’s (Declaration of Peace and Cessation of War) 10 articles and 38 clauses then you have to support it. If you think it isn’t enough, then you have to ask yourself why. Everyday we send peace letters to world leaders urging them to support the DPCW. We will be held responsible in the future if we don't do anything when we hold the answer for the realization of world peace. We must not pass this on to someone else or expect future generations to do it. The problems in today’s generation must be resolved by us. Please keep it."

Hanguk Daily, which reported the event, reported that the DPCW was drafted by HWPL and international law experts. It deals with realistic principles that countries must keep to achieve peace such as 'Prohibition of the threat or use of force', 'Freedom of religion' and 'Spreading a culture of peace'. It is currently being supported by leaders and parliaments from many countries.

The 3rd Annual Commemoration of the Declaration of Peace and Cessation of War (DPCW) was held at Jamsil Dome Stadium, Seoul, Korea on the 14th of March. The event was held to promote the DPCW and to push for its enactment at the U.N.

Korean press who covered the event reported that more than 30,000 people including former and current ministers, senior politicians and parliamentarians, leaders within society and education, religious experts and leaders of numerous NGOs participated in the event.

The 1st section of the ceremony featured the introduction of the DPCW, an opening speech, progress report and congratulatory speech. The 2nd portion of the ceremony comprised of lectures on 'Peace reunification of the Korean peninsular and the role of civil society for mutual inter-Korean exchange'.

In particular, the event incorporated time for writing peace-letters to former and current presidents and UN ambassadors of 193 countries to urge for their support of the DPCW for its enactment at the U.N. this September.

Pravin H. Parekh, the chairperson of the HWPL International Law Peace Committee and Indian Association of Lawyers said : "HWPL's peaceful movement will continue to make DPCW to be a part of international law and a legally-binding document".

HWPL (Heavenly Culture World Peace Restoration of Light) Chairperson Man Hee Lee said : "We must establish a legal instrument that forbids all global war and conflict"

At the press conference for the 3rd Annual Commemoration of the DPCW - held prior to the main event - Chairperson Man Hee Lee explained the purpose of carrying out this global campaign for the DPCW : "If previous international declarations (which allow war) were perfect, we wouldn't need to announce a new one (DPCW). Now everyone has to become an advocate of peace transcending borders, race and religion to fulfill the reunification of the Korean peninsular and cessation of war, which is the periodical duty of this generation."
