Many people may misunderstand Seoul, the capital of the Republic of Korea, to be a state-of-the-art city alone with global culture, but if you visit its narrow alleys behind its skyline and high-rise buildings, you will meet Seoul's particular traditional and modern culture :)

Dakhanmari (닭한마리 which means one whole chicken) is Seoul's indigenous food culture which originated in Dongdaemun alleys. There have been many chicken noodle soup restaurants in the alleyways of Dongdaemun since the 1970's with customers shouing 'Give me one whole chicken!' as they enter the restaurant to order chicken noodle soup. So 'one whole chicken' became the name of this menu :) Originally customers came to this alley to eat 'noodle soup with chicken', but gradually the menu was changed to 'whole chicken soup with noodle' because all customers shouted 'Give me one whole chicken!':)



The recipe is simple but every restaurant has a different know-how with its secrets for their dakhanmari recipe. They all put one whole chicken, leeks, water and spicy red pepper powder, but differ with the rest of the ingredients. Some put ginseng or kalopanax (thorn tree) or oriental herbs, and so on. So you can taste unique dakhanmari at each dakhanmari restaurant :)





One big whole chicken is served in a huge stainless bowl on a gas stove which customers chop with scissors (scissors are a typical utensil on the Korean meal table) when it's boiled. Then you eat pieces of chicken with the restaurant's unique spicy sauce and chopped chives. When you are finished with the chicken, you can order chopped noodle to eat with chicken soup :)

Similarly, the whole chicken is boiled in water for Samgyetang and Baeksuk but it's different from dakhanmari as that has a different recipe for soup and uses a spicy sauce :)

[Peace News] Experts of the World Warn Democratic Countries to Tackle Violence against Minorities






October 25th of 2019, Human Rights Without Frontiers (HRWF) in Belgium and the Center for Studies on New Religions (CENSNUR) in Italy co-hosted "Intolerance and discrimination against new religious movements: an international problem" to discuss international human rights issues with 40 legal experts, journalists and representatives of civil society organizations.

All participating experts addressed and discussed the issue of 'coercive conversion' and deprogramming that has caused severe human rights violations on religious minority groups in China, Japan, Russia, United States and South Korea.


South Korea has remained silent on the issue of these coercive conversion programs, which have resulted in the murder of two innocent people, acute family breakdowns and mental trauma for more than 1,200 Korean citizens committed by the Christian Council of Korea. It is, therefore, a significant event that was hosted in Korea. All legal experts agreed that the South Korean government must begin investigations and take measures against coercive conversion programs carried out by the Christian Council of Korea.



I hope that all world states will someday entirely resolve all human rights issues and guarantee religious freedoms for all :)

[IWPG] A World of Peace Drawn by Children: "2nd International Peace-Love Drawing Competition"


On sunny October 10th, IWPG (International Women's Peace Group; Chairwoman Mrs. Hyunsook Yoon) hosted its "2nd International Peace-Love Drawing Competition" at the Nurikum Square Building in Seoul.

The competition was held to spread a culture of peace throughout the world for world peace. More than 6500 students from 41 cities in 30 countries participated in each city under the theme "Cessation of War, Handwritten Peace Letters, Love for Nation and Peace, and Eradication of Weapons."

In this article, I want to share quotes and pictures of participants including the chairwoman of IWPG and children.

"There is a thing I find regrettable in this international event—that children and youth in North Korea were not able to join us. I am confident that if all youth across the globe have a great yearning for it, and our hope for peace touches heaven, we will be able to see the day when children and youth from the North take part in the event together with us. I promise that the IWPG will pour its efforts into realizing a world of peace on the drawing papers to ensure that they do not simply remain as drawings and also to make the event even better next year."

"Young children and youth are the key players who will lead the achievement of world peace. That is why it is all the more crucial that we teach them a culture of peace via drawings. Education on the culture of peace that enlightens people worldwide and brings together religions and nations should be done under the slogan, ‘We are one!'"

"I believe that we have a deep yearning for peace and consider it important because words like “war” and “conflict” exist. For wars to cease, what we need are peace and unification. "I believe that the majority of the people dream of building a world free of wars and that the children have sown the seed to make it a reality through these drawings. I think that when the seed grows, blossoms, and bears fruit, that would be the time when the world becomes a peaceful place."


As a member of HWPL Supporters One, I wish for a peaceful world that children dream of to come true soon in the near future :)

HWPL's WARP Office Seoul-Gyeonggi Eastern branch hosted 'The 23rd Seoul WARP Office meeting' on 24th June under the title 'The Truth (2)' with a panel of Buddhist, Confucian and Christian representatives.

The main question was: 'Does your scripture explain one truth in various ways?'

The Buddhist panel answered: "Buddhism is about a person becoming Buddha. It can be done by ones self or by help from others, but ultimately one has to realize it by oneself."

The Confucian panel answered: "The truth of Confucianism is 'One must improve ones self before teaching others', which has developed and changed throughout Chinese history."

The Christian panel answered: "The reality is that explanations of the Bible are rampant in Christianity. The reason is that God hid the future in a way that is hard to explain. We can only know the truth when HE lets us know it through someone with the Holy Spirit."

Panels who participated in the meeting said they enjoyed a heated and enthusiastic discussion over the topic. Panels also expressed regret that they didn't study more about the truth of their respective scriptures.

HWPL now has 250 WARP Office branches globally for the Alliance of Religions' Peace and WARP Office meetings to achieve world peace.

HWPL (Heavenly Culture, World Peace, Restoration of Light. Chairperson: Mr. Man Hee Lee) published an official article about the May 25th Peace Walk Event. Its homepage reported that "the 6th Annual Commemoration of the Declaration of World Peace and Peace Walk" was held under the theme "The World's Call for Peace, Urging Support for the Declaration of Peace and Cessation of War (DPCW)" in 126 cities in 77 countries including Australia, China, Germany, India, Russia, South Africa, the Philippines, and the United States of America.

In Seoul, South Korea, the event was hosted at the Olympic Park with more than 20,000 citizens participating in the "Peace Letter Campaign" to support the DPCW (Declaration of Peace and Cessation of War) with its 10 articles and 38 clauses, urging world leaders to enact the DPCW as legally binding international law.

HWPL (Heavenly Culture, World Peace, Restoration of Light. Chairperson: Mr. Man Hee Lee) also provided beautiful photos of the May 25th Peace Walk Event that was held in Seoul and other cities throughout Korea. Let me show you some of them :)

[Peace News] Mr. Man Hee Lee is Awarded the Seoul Peace Culture Grand Prize!



Greetings, family of peace! :)


Today I bring you a short online newspaper with some photos (which I love).

Have you ever heard of the Seoul Peace Culture Grand Prize? Well, I'm sure you've never heard of it because it is a prize that is only awarded in Korea. Anyway, on the 14th Dec at Kensington hotel, Daily Seoul and Seoul Peace Culture Policy Institute co-hosted the Seoul Peace Culture Awards. 

The Seoul Peace Culture Award is a national award that began in 2007 to demonstrate the will and belief of Koreans who desire the well-being of humanity and eternal peace for the world.


HWPL's chairman Man Hee Lee is awarded the Seoul Peace Culture Grand Prize, Reporter Chaebong Lee, Segye Times 18-12-2018, Korea 


During his award speech, Chairman Man Hee Lee said, "The purpose of HWPL is the cessation of war through an international law (DPCW : Declaration of Peace and Cessation of War) which prohibits the production of weapons and war. It is acknowledged throughout the world as an effective measure to end wars. I'd really like to ask for the cooperation of Koreans in supporting HWPL to accomplish the peaceful reunification of the Korean peninsula in a practical way."

The Segye Times introduced HWPL as "an NGO under the ECOSOC (Economic and Social Council) and the UN's DPI (Department of Public Information)" which is carrying out the enactment of international law, alliance of religions, peace education and more to achieve world peace.

The article also said that HWPL has been taking the lead in peace initiatives and campaigns which represent all social classes through its peace tours that began in 2012, as well as its annual event - the WARP (World Alliance of Religions' Peace) Summit - that invites people from all over the world to engage in cooperation and discussion of world peace since 2014.

The paper emphasized that HWPL has been expanding its international alliances and initiatives through the 918 Peace Festival WARP summit, the enactment of new international law compatible with the DPCW and Legislate Peace Campaign, peace education, harmony of religions etc. To date, more than one million people in 170 countries have participated in the Legislate Peace Campaign.

Writer's comment : I'm so glad that, within Korea itself, HWPL and Mr. Man Hee Lee's efforts and works are gaining recognition and being credited for world peace. I actually think they should have awarded the prize to HWPL and Mr. Man Hee Lee earlier, but it is a very significant step that Koreans are now also welcoming HWPL and its chairman's work for world peace. I hope someday.

Chusok (추석, Korean Thanksgiving Day) is a few days away, and I will be heading to Busan by overnight coach after work on Sunday (Yes, the city of Dwaeji Gukbap) where my parents currently live.

Chusok is one of the biggest national holidays in Korea, alongside Korean New Year in February. During Chusok, Koreans give thanks to God and their ancestors for all the harvested fruits and blessings they have received that year. To express gratitude towards God and their ancestors, they carry out a ceremonial service (in the case of a Christian family) or perform ancestral rites by offering all the yay fruits and foods to them. Moreover, Koreans visit a cemetery where their ancestors are buried or a columbarium where their urns are kept.

And in my family's case? We have ancestral rites the traditional Korean way :) whereby I bow to my grandpa and his parents, to my maternal grandparents, and to my great-aunt (my dad's older sister).

So my grandma, who is 94-years-old, is now the oldest member of the Kim family. I always remember her as being a very kind and loving grandma, often nagging me 'When are you going to marry?' 'Get a better job than what you have now' 'Study hard' 'Improve yourself in all ways' etc., but she welcomed my sister and I whenever we visited her house in Busan on vacation. My father used to tell me how unfortunate it was that she was born during the Japanese colonial era in Korea when women had few opportunities to develop themselves into successful professionals. In spite of her intelligence, memorisation abilities, mathematical and linguistic gifts, there were few options other than becoming a good housewife, tailor, dancer, singer or cook. Well, I think that, from her children's perspective (my aunts, uncle and dad), she achieved her dream of going to university and getting a good job because they all went to top universities in Korea then secured well-paid jobs.

Meanwhile, for me, if anyone asks me 'what pops up in your mind when you think about grandma?' I would answer 'Bulgogi (불고기, Korean-style marinated beef) - her signature Bulgogi that only I can eat when she cooks in
her kitchen'.

It's quite astonishing that most - if not all - grandpas or grandmas has his/her own secret recipe. My grandma also has a few secret Korean recipes. My favorite is her Bulgogi :)

I don't know where she learned or how she figured out her Bulgogi recipe, but it has always been more than delicious and indescribably tasty. I once asked her how she makes her marinating sauce for Bulgogi, and she answered:

"Just put in the ingredients you need, then it's done. It's no different from any other Bulgogi recipe....it's nothing special, son.."

Wow....No, grandma, your recipe should be registered to UNESCO and published in Korea and throughout the world for eternity! Bulgogi's main flavor is mild saltiness, sweetness and tenderness of soy sauce with marinated thinly sliced sirloin. My grandma's Bulgogi has an extra tender soy sauce with marinated meat and mild spicy flavor from minced garlic - in addition to normal Bulgogi recipe :) No one can guess how she does it. My mom and aunt also tried her recipe but it was not as tasty as grandma's....I think grandma's Bulgogi recipe is a mystery in the Kim family.

Well, unfortunately, Bulgogi's origin is uncertain compares to its certain fame. It is said that Bulgogi has existed since 300 or 400 A.D., but the official record is that it was written in the Korean cookbooks of the 1800s. The recipe had been passed down future generations and Pyeongyang Bulgogi (N.Korea's current capital city) became very famous in the early 1900s in Korea. There are a few more types of Bulgogi that differ by city. Bulgogi and Korean BBQ culture later spread and crossed into Japan, becoming 'Yakiniku (Japanese BBQ)'.



Seoul-style Bulgogi - sweet soy sauce flavor with lots of veggies and soup. This is the most famous type of Bulgogi in Korea and in the world.
Unyang style Bulgogi - scored and coarsely chop the meat and marinate it. Then grill it on a charcoal fire.
Bonggye style Bulgogi - Only Bulgogi that doesn't use any seasoning or sauce but rather salt. 
Gwangyang style Bulgogi - No marinating process. Sliced meat is roasted on charcoal right after shower of Bulgogi sauce, similar to Unyang style Bulgogi.

To make Bulgogi you'll need:

Thinly sliced or chopped sirloin

Fine sugar

A Juicy Korean pear

Korean's favorite ingredient: minced garlic

Soy sauce

Onion

To make Bulgogi: first of all, thinly slice Bulgogi is scored then marinated with sugar, Korean pear juice to be tendered. Then Bulgogi sauce (soy sauce, minced garlic, sugar, honey etc.) is poured onto the marinated meat. Then you roast, stir-fry or boil it to cook the meat :) You can choose the style you want.

Until some years ago, I could look forward to tasting my gandma's Bulgogi at Chusok, but now I can't. She is now 94, which means she doesn't have enough power to cook for her family anymore...my aunt cooks the Kim family style Bulgogi, but frankly-speaking, it is not as good as the original (Sorry, Mrs. Park. I love your food though) :(

Although we can't eat grandma's Bulgogi anymore, I'm sure that her warm heart and kindness to her family will pass down through her children and future generations through her Bulgogi recipe :)
