[Food] Gejang (게장, Marinated Crab)

[Food] Gejang (게장, Marinated Crab)

Koreans have loved marinated and fermented food for a long time, particularly when it comes to seafood. Seafood couldn't be stored for a long time so they invented recipes that could do so preventing them from becoming rotten and stale.

Gejang (게장, Marinated Crab) is a traditional Korean marinating recipe which marinates live crab caught in the autumn (usually blue crab caught from the West Sea, but freshwater crab can be used too) in soy sauce with garlic and spicy chili, to be eaten the following summer as a side dish. It can be marinated in spicy chili sauce too but Koreans usually prefer soy-sauce marinated crab because it's more savory and has a deeper flavor of crab.

Recipes of gejang were written in many traditional cookbooks in Korea since the 1600s (Chosun Dynasty), but some people argue that gejang was eaten even before then. Gyeongsang (South-east region), Jeonra (South-west region) and Jeju Island are all famous for gejang, and each region has its own recipe with its unique ingredients and style.

Ganjang Gejang (Soy sauce marinated crab)

Yangnyeom Gejang (Spicy sauce marinated crab)

The flesh, intestines and egg of a crab is very soft, silky and even slimy with a savory, salty and sea-like flavor. Because of its salty and savory flavor, Koreans usually call it 'Babdoduk', which means 'Rice Thief' in Korean, because it makes people eat more quantities and more rapidly than other dishes.

However, people (including Koreans) usually think gejang looks gross and too exotic with its fishy smell, so it is a food of strong likes and dislikes.

Saewoojang (Marinated shrimp, same recipe with gajang but different ingredient)

Typical Korean meal with gajang and saewoojang

If you think you are a seafood or crab lover, how about trying gejang? It will be a great challenge, but also great fun :)

[Food] Gwamegi (과메기, Half-dried herring and saury)

 [Food]

[Food] Gwamegi (과메기, Half-dried herring and saury)

Gwamegi has been a very familiar and friendly food for fishermen of the east coast of the Korean peninsular for a long time (since the 16th century) because of its taste and affordable ingredient. Its main ingredient is herring or saury (mackerel pike) which is very cheap and easy to catch. When fishermen found out about its recipe a long time ago, they made it with herring. However, when the temperature of the East Sea became affected by climate change  since the 1960s, they used saury as a substitute for herring. These days herring gwamegi is being produced again because climate change has continued to impact the East Sea.

Saury (Mackerel pike)

Herring

To make gwamegi, fishermen remove the intestines, gills and scales of fresh saury and herring, then skew its eyes to prevent it from getting rotten. Then fish are frozen to -10 degrees Celsius, and undergo repeat outdoor freezing and defrosting from December until the fish become half-dried.

When fish is fully half-dried, its bone and skin are removed. It has a really savory, somewhat fishy taste with seaweed, kelp, laver, garlic, spicy green chili, chogochujang (red chili paste with vinegar) and ssamjang (mixture of red chili paste and bean paste).

It rarely becomes stale and can be stored for a long time so fishermen favor it. It was also a good food supply for them when they lost their ship due to invasion and robbing by Japanese pirates.

Today, this is one of the best side dishes for soju :)

People usually favor herring gwamegi over saury gwamegi because herring tastes lighter, cleaner and motr plain than saury. Gwamegi is a seasonal dish that you only can eat during the winter, which gives a chewy and firm texture filled with DHA, EPA and vitamin E :)

Today Guryongpo of Pohang is the main production area, famous for gwamegi. Don't forget to visit Guryongpo for gwamegi if you have any chance to visit Pohang :)

[HWPL] Answer to Religious Cycles Stained with Disunity and Conflict: 'WARP Office'

[Cheonji Ilbo = Reporter Kang Soo-kyung] “If you truly want to achieve world peace, you must unite religions as one.”

㈔Heavenly Culture, World Peace, Restoration of Light (HWPL) Chairman Man-Hee Lee started his journey for world peace and has received great response from overseas religious circles through the World Alliance of Religions' Peace Office.

HWPL's World Alliance of Religions' Peace Office currently has branches in 253 locations in 129 countries, and is promoting the world alliance of religions through comparative discussions of scripture and a forum for religious dialogue. Chairman Lee has led 31 peace tours around the world, and has never failed to miss a meeting with local religious dignitaries.

Chairman Lee said that the first step of this movement took place at the 1st WARP Summit. Chairman Lee and 12 leaders - including two from the Anglican Church - signed the “Peace Agreement” at the “World Alliance of Religions' Peace Agreement Ceremony;” a highlight of the 9.18 WARP Summit held on September 18th in 2014. In order, the faiths in attendance were Islam, Catholicism, Hinduism, Buddhism, Protestant Anglicanism, Sikhism, Judaism, Bahaism, Jainism and Zoroastrianism.

Religious leaders who signed the agreement were Singh Sahib Giani Gurbachan, head of the Sikh Golden Temple, Sirigu International Law School President, Chidanand Saraswati Maharajji, President of the India Palmas Niketan Ashram (Monastery); Antonio Ledesma, Mindanao, Philippines Archbishop Cagayan de Oro; Rabbi of 'Rabbis for Human Rights' Jeremy Yehuda Milgrom; President of the University of Meher Master Muss Zoroaster; Sayed Ali El Amin, Grand Ayatollah of Lebanon; and Archbishop Patricio Robles of the Anglican Episcopal Church of Chile.

At the time, Chairman Man-Hee Lee said in an opening speech, “There is only one God who created the heavens and the earth, and there is only one meaning and scripture...there are more than 100 religions on the earth that each claim to originate from God, but their scriptures, practices and meanings are all different. They fight with each other, and this dishonors God. This shows that they are old and corrupt.” He also affirmed that "the true God does not cause strife and killings," and, "If people who live by receiving the light, rain, and air which is the grace of life from heaven do not love but kill each other, then this is an act of forgetting the grace that they have received."

In addition, Chairman Lee said, “By eradicating corrupt religion and uniting religion under the One and only true God, we will become a world of religion without dispute, and world peace will be achieved. If we do not do this, mankind will be destroyed. If you do this, all mankind will be blessed." He emphasized, "the world will be ruled by the true God, the source of all blessings, and God will become one under one religion.”

Chairman Lee said to the religious leaders who attended the religious conference, “Let us achieve a world of peace according to God's will. Let's get rid of disputes and sign a peace agreement among religious people. Peace is not one person's possession. We must become the foundation stone to create a new era today.”

Hindu leader Chidanand Saraswati Maharajji, President of the India Palmas Niketan Ashram (Monastery), who attended the event, responded, "Religion is not made for war, but for peace." “We are spiritually one family.” “We must respect each other's insights, be harmonious, and live in peace. Now the time has come for religion to become one. Each religion should stop speaking its own words and become one.”

Singh Sahib Giani Gurbachan, head of the Sikh Golden Temple, said in reference to the WARP Summit for the World Alliance of Religions, “It is a landmark event blessed by God for peace.” "Religious leaders who promote division, not the unity of religion, are political leaders, not religious leaders.”

The message of religious integration, initiated by Chairman Man-Hee Lee, became reality through the activities of HWPL's WARP Office. After religious leaders signed the peace agreement, WARP offices in 253 locations in 129 countries around the world actively engaged with neighboring religions to achieve religious unity.

Different religious people with different scriptures and beliefs in different religions gathered and held a "Scripture Dialogue" to compare their respective religion's scriptures. Religious leaders who participated in this debate gathered saying, "Through this debate, we can learn the will of God contained in the scriptures and truly embrace other religions."

During the annual WARP Summit, a separate session was held which religious people from all over the world attended, and in-depth discussions were conducted on the “Scripture Dialogue,” a method for unifying under religion. In addition, many religious people who became HWPL members and compared scriptures were encouraged to participate within each religion.

HWPL's Scripture Dialogue began with remarks of gratitude by overseas religious leaders, and was actively conducted nationwide in Korea. Dozens of meetings have been held at the WARP Office each year through each branch.

On June 27th, 2016, religious leaders from Korea, China and Japan gathered at the Goseong Peace Institute and held the Religious Leaders' Peace Conference. That day, representatives of 10 orders including Buddhism, Confucianism and Christianity, such as Geumgangseonwon Haegeo, who mastered the three Buddhist orders of the Korean Buddhism, and Jeongseok Lee of Myeongryun Hakdang (village school) in Cheonghak-dong Mt. Jiri, Bajeong Dageol of Mapa Temple in China, and Deputy Secretary General Gong gang-wi from the Confucius Genealogy Compilation Committee. More than 120 leaders from Korea, China and other countries attended.

On August 26th, 2016, the 4th Scripture Comparison Discussion was held at the Central Hall of Cheondogyo, Jongno-District, Seoul. About 400 people, including  religious leaders from Confucianism, Christianity and Korean religions attended the event.

That year, the “Bible and Buddhist scriptures” were compared in the first and second rounds, and in the third round, the “Bible, Buddhist, Hindu and Korean religious scriptures” were all compared.

The WARP Office sought a common denominator through the “Scripture Dialogue" for the unity of Christianity that has been divided into thousands of sects while having the same scriptures and faith.

The response of pastors who attended this event was positive.

Pastor A, who participated as a panel at the 2018 Seoul-Gyeonggi North branch meeting, said, "Building a wall is not our goal, but our goal is to communicate," and, "Thank you for providing a space for us to engage in peaceful dialogue."

Pastor B, who participated as a panel at the Jeonju branch meeting, also stressed, "I hope that many such meetings will be formed so that there will be many opportunities to plan and promote peace."

The Presbyterian Pastor C, who attended the meeting held at the WARP Office headquarters, said, “As I observe the attitude of the audience in attendance, I can see that many people are missing the word in this era. As I listened to the speeches, Shincheonji Church of Jesus preached Biblically and accurately. It is not right to criticize Shincheonji Church of Jesus without knowing their content." He stressed the necessity of this meeting, saying, “The Scripture Dialogue is important beyond any denomination.”

As such, the satisfaction of the religious leaders who participate in the Scripture Dialogue held by the HWPL WARP Office is high. They also affirm HWPL's peace movement under the slogan, "Let's pass on a world of peace, without war, as a legacy", showing their sincerity and dedication to "peace", that no previous meeting has ever been able to achieve.

Peace!

[Food] Maesaengi (매생이, Seaweed Fulvescens)

Maesaengi (매생이, Seaweed Fulvescens) is not a very well-known seafood/
ingredient in Korea, it's usually eaten in China and Korea as soup and porridge. The reason why it's not well known to most  people is that it can only be grown in the crystal-clear clean sea in winter. Fishermen of the south-western coast (Jeonnam province) of the Korean peninsula usually plant and cultivate it.

It gives a savory, mild and refreshing taste with a very silky texture. It doesn't puff any steam out even when boiled or very hot, so you have to be very careful when you eat any porridge or soup made of maesaengi. There's an idiom in Korean that says. 'Give maesaengi soup to the annoying son-in-law' (the son-in-law will burn his tongue if he doesn't know his mom-in-law is giving him maesaengi).

You'd better be careful if you've been a naughty boy (or son-in-law)

Maesaengi is one of my favorite ingredients because it gives a refreshing sea flavor and also goes very well with any kind of hot soup or porridge (even in ramen and cup noodle). Moreover, it's very easy to cook. You can make pancake with it too.

Oyster is perfect partner to maesaengi

It's maesaengi pancake, not green tea flavored one.

You can buy maesaengi in any winter market. It looks like a ball of thin green string. Wash it with salt water, then it's ready to be put into pancake dough or soup :)

These days, with the help of food science and technology, people can buy quick-frozen dry maesaengi which becomes fresh when it goes into hot water or soup :)

A package of quick-frozen maesaengi from Wando (Wan Island in south-west region of Korea)

This one bag contains maesaengi for one person

Maesaengi is full of minerals, folic acid, zinc, fiber and proteins - very nutritious :) If you are thinking of hot soup or porridge in the winter, how about maesaengi soup today? I hope you don't burn your tongue :)

[Cheonji Ilbo = Reporter Kang Soo-kyung] Gapyeong Peace Institute is used as a venue for dinners, meetings, and various educational events attended by both domestic and foreign guests at major events held by the Heavenly Culture World Peace Restoration of Light (HWPL, CEO Man-Hee Lee).

Political leaders from all over the world, civic groups such as women and youth, and 200,000 people from other religions and the media participated, and since September 2014, when the HWPL World Peace Summit first started, various meetings have been held here. Religious scripture comparison discussions, meetings with religious people, and peace education training were held in a 120-seat auditorium equipped with a broadcasting room, and meetings with personnel were held on the third floor of the training center.

According to officials, official events were held 10 to 20 times a year, including 48 times from September to December 2014. In addition, it has been steadily used as a place for peace education for students from different countries to learn about HWPL's peace culture. When tangible results emerged through various discussions, an event was also held to inform them.

One of the representative events is the Goseong Peace Conference held on September 16, 2018. It was a meeting of peace talks between HWPL and the “Baltic Black Sea Council,” composed of heads of Eastern European countries, to discuss solutions to peace in the global village.

This was also the fruit of the peace movement that the heads of Eastern European countries and HWPL, who were impressed by attending the 2014 HWPL World Peace Summit after establishing a relationship with HWPL, have been fruitful through exchange and sympathy for over four years. At this meeting, a “joint agreement” between HWPL and the Baltic Black Sea Board was announced.

The “Baltic Black Sea Council” is an organization established to respond to conflicts and threats arising in the Baltic Black Sea region, and is composed of former and incumbent presidents of Ukraine, Poland, Estonia, Bulgaria and Romania. At the peace talks, including HWPL President Man-hee Lee, former Romanian President Emil Constantinescu of the Baltic Black Sea Council, former President of Moldova Petru Luchinsci, former Chief of Belarusian Supreme Council Stenislav Shshkevich, and former Ukrainian President Victor Yushchenko The former president and others attended.

Two members from HWPL's affiliated organizations World Women's Peace Group (IWPG) and International Youth Peace Group (IPYG) also attended.

In this agreement, the two organizations shared the recognition of the importance of an approach based on common cooperation in order to end disputes around the world and peace, which is the top priority as partners in peace initiatives. In addition, in the agreement, the two groups will cooperate to maintain peace not only in the Korean Peninsula and the Baltic Black Sea region, but also around the world.

At the Peace Talks for the Agreement ▲ Fundamental Solution for Ending War in the Global Village ▲ Cooperation Plan to Advance the Global War End Peace Declaration (DPCW) into a Legally Binding Act ▲ Cooperation Plan for Peaceful Unification on the Korean Peninsula ▲ The World of the Baltic Black Sea Four topics were discussed, including plans for cooperation with HWPL on the peace and order project.

At the time, HWPL CEO Man-Hee Lee said, “The only way for humanity to survive is world peace through the end of war.” “We must achieve peace together in the spirit of peace. I believe that peace will spread all over the world.”

Irina Bereshchuk, Chairman of the Baltic Black Sea Forum, said, “HWPL and the Baltic Black Sea Council held this peace talk to agree on peace and ending war on the Korean Peninsula and the Baltic Black Sea. We decided to carry out peace education to settle the culture of peace while handing over the earth to future generations,” he expressed positive support.
